Casa Camacho
Order the Yayo: sweet vermouth, soda and a measure of gin deliberately difficult to detect. That is both its charm and its warning.
Casa Camacho is small, inexpensive and usually crowded. It is not a cocktail bar and should not be treated like one.
Stand at the counter, drink one before lunch and leave while it still tastes deceptively harmless.

Sacha
Begin with the tortilla vaga: cooked only underneath, loose through the middle and finished with combinations such as morcilla, leek and piparra. It has been copied widely. This is the original.
The rest of the meal should follow what came in that morning, particularly seafood, rather than an order assembled online.
Take the later table. Order the tortilla regardless. Protect the afternoon.

La Tasquita de Enfrente
The room is narrow, cluttered and more personal than luxurious. Juanjo López starts with recognizable Spanish ingredients and removes almost everything that does not help them.
Reports consistently praise the precision of the food and the attentiveness of the service. The counterargument is price: simplicity this considered is not inexpensive.
Choose it when the ingredient matters more than spectacle. Ask what López most wants to cook that evening.

Another Night / The Unexpected Table
Gofio
Gofio uses a tasting menu to tell a specifically Canarian story through mojos, island wines, gofio and dishes still unfamiliar to many regular visitors to Madrid.
The strongest accounts describe something personal, technically precise and less stiff than its Michelin billing suggests. The reservations concern tasting-menu length and occasional inconsistency.
Go for the Canary Islands interpreted through one kitchen, not because a guide awarded it a star.

La Venencia serves sherry, not reassurance. The room is dark, orders are marked in chalk and old rules, including no photography, remain part of the experience.

Begin with fino or manzanilla. Move to oloroso if another glass still sounds sensible. Two glasses are enough.
